BBQ Jackfruit

Cans of Jackfruit in brine (I used 4 cans for a family of 5, and had leftovers).

Purchase jackfruit from Asian market.  Be sure to get the kind in brine not syrup.  The young jackfruit is not yet ripe, and not as sweet as the variety in syrup.  Jackfruit in syrup is traditionally used to make dessert.

In colander under water, rinse and shred Jackruit by hand or with a fork.

Place shredded Jackfruit in crockpot with 3/4 bottle of BBQ sauce of choice.

Cook on high for 1 1/2 hours.

Serve on open-faced buns with slaw, corn, potatoes of your choice or baked beans and extra sauce.
