Kidney Bean and Butternut Jamba Stew

It’s a funny story how dinner evolved. I have absolutely no meal plan this week, so I asked my daughter to pick out any dried beans from the pantry that she would like for dinner tonight.

She picked red kidney beans. I popped them in the pressure cooker, then started my search for a recipe.

The first cookbook I pulled out, Appetite for Reduction, had an interesting recipe that called for the kidneys. Plus, I had a butternut squash that I have been meaning to use.

The whole family thought the Kidney Bean and Butternut Jamba Stew was delicious. And my oldest was thrilled to know I made a double-batch, so he can have leftovers tomorrow!
