County Fair Slow Cooker Oatmeal

Our church hosts a monthly meeting for moms.  There are easily over 100 members.  We have assigned tables, monthly charity involvement, guest speakers, great devotionals and conversations.  This month was my table’s turn to bring a [breakfast] dish.

When I went online to sign-up, all of the fruit, bread and savory slots were taken.  I started to sign-up in the “egg” category and make Isa’s delicious “Mom’s Morning Casserole” from Vegan Brunch, but then decided since I had to leave home much earlier than normal, I’d better bring something a little easier.  So, my County Fair Slow Cooker Oatmeal was born!

County Fair Slow Cooker Oatmeal

(as you can see from the photo, this is enough to fill a large crock pot)

  • 5 cups oats
  • 8 cups vanilla almond milk
  • 8 cups water
  • 1 cup brown sugar
  • 3 Granny Smith Apples, chopped and cut into bite-size pieces
  • 2 tablespoons Vanilla
  • 1/4 cup Agave

Place all ingredients in slow-cooker.  Cook on low for 7 hours (or overnight).
