The pureed vegetables (baby food) really does give the chili that extra nutritional boost. And trust me, you cannot even tell it is there!
Baby Food Chili: (Shhh…don’t tell my husband)!
1 tablespoon olive oil
1/2 onion, chopped
1 red bell pepper, chopped
1 tablespoon garlic, minced
1/2 cup water
15 oz can vegetable broth
3 – 15 oz cans fire roasted diced tomatoes
4 – 15 oz cans (or cooked) of your favorite chili beans (I used black beans and cannelini)
2 bay leaves
1/4 cup chili powder
1 1/2 tablespoon cumin
1 tablespoon thyme
salt and pepper
3 small jars pureed baby food vegetables (I used organic green peas/rice and organic carrots/tomato)
Heat olive oil in large stock pot. Saute’ onion and bell pepper until
soft. Add garlic, and saute for an additional minute.
Add water, vegetable broth and tomatoes to pot. Stir.
Add beans, spices and baby food.
Simmer for half an hour.
