What I Ate Wednesday: Home from the Holidays Edition

We just got home from our holiday vacay…at 2ish am this morning.  My kitchen whole house is ridiculous.  I am sure the next few days I will be busy sneaking organizational projects in between our school breaks.  (We homeschool in case you did not know).  

But organization is on pause for the next 24 hours.  My princess is turning five.  Here is a before pic I took tonight.  My kitchen will be in further disarray in T-minus 6 hours!

Her auntie tells me this is her golden birthday since it is her fifth, and it is on the fifth.  I need to take her shopping for something gold tomorrow while we are out fulfilling her birthday wishes.  Hmm, wonder if Tiffany’s would freak out if I walked in with all three kids in tow.  Bwahahaha!

So between stepping over canvas bags full of food to put away from the trip, filling the garden tub with fake snow for us to play in (to go along with K’s literature study, “The Snowy Day”) and finishing up our new spring schedule, I did manage to cook up some yummy eats.  Welcome back to What I Ate Wednesday!

I have been reading a lot about apples, peanut butter and carrots for breakfast lately.  The topic first piqued my interest on Facebook when my friend, Mama Tonie at Mama Mia, my other friend, Jess at Growing Healthy Sprouts, and I had a meal planning discussion.  As I had guessed, my kids were intrigued perplexed with the idea of carrots for breakfast.  I chose not to pay their comments much attention until they began asking for more and more carrots.  Mission accomplished!

Snack:

I promise I am not in denial that the Christmas season is over.  I just have not tackled Round 2 of “Operation Christmas Decoration Clean-up,” and I just happened to stock up on these delicious limited time Stacy’s Simply Gingerbread Pita Chips and the Green Mountain Natural Apple Cider Kcups!

Dinner:

Blackened Scrambled Tofu with Sautéed Spinach and Polenta.  Delicious.  Love the PPK!
