Today’s eats contained lots of taste-testing.  We are gearing up for a big Thanksgiving here.  With so many yummy dishes going in and coming out of the oven, I could not help myself.

Breakfast:

Blackberries and Pumpkin Cream Pie Smoothie [recipe below!]

Lunch:

Southwest-Style Salad

Dinner:

Terrific Tempeh Tacos Bar

Pumpkin Cream Pie Smoothie Recipe:

  • 1 banana
  • ¼ cup raw cashews
  • 3 tablespoons Coconut Milk Plain Yogurt
  • 1 cup Silk Pumpkin Spice Soymilk
  • ½ cup almond milk
  • 1 ½ tablespoons chia seeds
  • 1/8 teaspoon pumpkin pie spice

Blend all until smooth.
