Peanut-y Stir Fry with Thai Rice Noodles

We recently popped into the Asian market downtown to pickup a 25 pound bag of Jasmine rice for C.  Yes, you read that right, 25 lbs!  My husband likes Jasmine rice.  {smile}

I found these neat rice sticks.


I boiled them just like pasta [for 8 minutes], while I stir-fried these frozen veggies with some tamari.  After plating, I drizzled a wee bit more tamari before sprinkling on some peanut-y goodness.

The Thai rice noodles were a delicious change to what is becoming a weekly stir-fry event at our house.  We will be going back for more of the noodles [aka rice sticks] once we are finished with all 25 pounds of rice!
