What I Ate Wednesday

Wow, this week has flown by.  My husband traveled some last week which meant my Mom hopped on an airplane ASAP to come help out play!  I also got to get together with a good friend and running buddy for what I thought would be the last time before she moves out-of-state.  However, she posted on Facebook the other day that she wished she had time, between packing, to make this Pumpkin Cheesecake with Pecan Crunch Topping from the PPK:

…to which I promptly commented that I would make and bring to her so we (and the kids) can have one last soiree.  That’s a win-win, wouldn’t you say?  I’ll post a review after I indulge in my own next week!

Another big event for me this week is I finally started dance classes again!  I am super stoked to be back.  In fact, I am so zealous, that I have committed to back-to-back classes = 2 hours in the dance studio.   Which brings me to today when my body told me I had to get back to yoga, too.  Now, to get back on the road.

Although, I did forget to post a pic of the 5K that W (his first!) and I ran the weekend before last.

Between 5K’s, dancing my tushie off way more than I have been accustomed to since M was born and Daylight Savings Time, I think I should put myself to bed early the rest of this week to catch up on my ZZzzzz’s!

Breakfast:

Whole Wheat Grain Squares with Almond Milk, Strawberry O’Soy Yogurt and the new flavor of Good Belly.  (Yes, I was feeling the need of a good digestive boost this morning for some reason…thus the yogurt and probiotic drink).

AM Snack:

Lunch:

The Best Vegetarian Chili in the World (I promise, I am not being haughty.  I found this recipe a few years ago on All Recipes and it is still my go-to chili recipe with a few tweaks here and there).  Paired with a side of steamed California Veggies.

PM Snack:

Graham Crackers with Raw Almond Butter in the car between K’s ballet class and both the big kids’ basketball practices.

Dinner:

Bean Chimichanga, rice and yes, more beans.  🙂  Since the afternoon was so hectic, we ate dinner out at one of the kids’ favorite Mexican restaurants.  They piled so much on my plate, that I have a whole other chimi chilling in the fridge for tomorrow’s lunch!
