Color Me Blue/Purple: Color Me Vegan Series and Giveaway

Welcome to the Color Me Blue/Purple day of the (Color Me Vegan) Series!  Thanks to everyone who participated in the contest.  Our winner was announced last week on the Giveaway page.

This week’s simple nutritional fact from the book is that only 3 percent of the average American’s produce intake is made up of blue and purple foods.  While this color group of food is consumed much less, those who do eat these foods are less likely to be overweight and are at a reduced risk for high blood pressure.

Here are some of the BLUE/PURPLE recipes from the book that we have enjoyed recently.

Purple Kale and White Bean Soup

The recipe suggests that dinosaur, Lacinato or curly green kale can be used.  I opted for dinosaur kale since I could not find the purple variety.

Linguine with Purple Cabbage

This dish was an easy dish to prepare, pack and take with us to an event one week night.

Fresh Fig Upside-Down Cake

A few weeks ago, my store had buy-one-get-one-free figs.  I picked up lots of figs.  This was one of my family’s favorite fig dishes that I made.
