Wow, I have missed my WIAW blogging friends!  In case you missed it, THIS is where I have been the last couple of weeks.  And as promised, readers, delicious vegan eats await you in this week’s WIAW post.

Breakfast:

Thanks to Crazy Sexy Diet I have been juicing a lot lately.  I took a green juice break for breakfast and mixed up this Strawberry, Pineapple Peach Deliciousness!

Morning Snack:

True Blueberry mixed with Raspberry Zinger Hot Tea (Mixing my teas is a new hobby thanks to Jess)!

And, I am so busy, that I cannot seem to remember to remove my mug from the microwave…even after 3 reheats, much less have the 2 seconds it takes to fill a kettle.  So, I just use my Keurig to run the hot water, then pop in the tea bag(s).  I am not sure why, but the tea actually gets consumed when I make it this way.

Lunch:

Green Juice made with cucumbers, kale, apples and broccoli stems

Dinner:

Stir-Fry with Hoison Glaze, Tofu and Steamed Greens

Stir-Fry with Hoison Glaze, Tofu and Steamed Greens:

  • 2 packages stir-fry veggies (pre-packaged in produce section)
  • tamari, to taste
  • 2 packages cubed tofu
  • hoison, to taste
  • 1 bunch greens of choice (kale, collard, etc.)
  • bean sprouts

Stir fry veggies in tamari.  Toss tofu in a pan with hoison sauce until beginning to brown.  Steam greens in water with a pinch of salt.

To plate: layer greens first, then veggies followed by tofu.  Top with fresh bean sprouts.
