Color Me Yellow: Color Me Vegan Series and Giveaway

Posted on September 6, 2011

Welcome to the Color Me Yellow day of the (Color Me Vegan) Series!  Remember, if you would like to add this book to your repertoire, be sure to enter the Giveaway!

And now for our “Did you know…”  Did you know that the carotenoid, lutein, found in chicken eggs is derived from the yellow (and green and orange) plants that chickens eat?  Opt for lutein-rich plants versus eating eggs that contain saturated fat, dietary cholesterol and unhealthful unnecessary animal protein.

Here are some of the YELLOW recipes from the book that we have enjoyed recently.

Corn Chowder

beautiful, organic heirloom tomato and African basil from our garden that topped the Corn Chowder

Summer Squash with Cherry Tomatoes Topped with Cheesy Toasted Pine Nuts

plated with red quinoa and steamed greens

Frozen Banana Dessert

Caramelized Bananas

Hot Tamale Pie and Caramelized Bananas
