What I Ate Wednesday

Today marked week 3 of 3 that I made it to yoga!  Now for the interesting question…who invited the paparazzi?!!  Since I was a couple of minutes late, I must have missed the announcement that someone would be snapping {flash} photography during most of the class.

So, although, it made for a semi-awkward yoga class, my body is still thanking me for sticking to my new yoga commitment.  Plus, I am thankful for the fact that Miss Paparazzi knelt in front of me during my Cat pose and not behind or beside me for my Downward Dog!

Breakfast:

Strawberry O’Soy Yogurt and Water on the way to Yoga

Lunch:

Romaine with Mandarin Oranges, Strawberries, Blueberries, Pineapple and Pecans

(My veganized version of Panera Bread’s Strawberry Poppyseed Salad)

Dinner:

Summer Squash with Cherry Tomatoes Topped with Cheesy Toasted Pine Nuts (from Color Me Vegan), Red Quinoa and Sautéed Kale and Spinach

I tried a new method of cooking quinoa this time.  I found this How to Cook Quinoa Perfectly site and followed the quick cook method at the bottom of the post.  The texture was much better using less liquid, although I ended up cooking it a little longer than the suggested 15 minutes.

Dessert:

Frozen Banana Dessert (from Color Me Vegan) with Fresh Red Currants
