I got to run in the rain today!  I know that may sound crazy to some, but little compares to the serenity of a run in the rain.

After that delicious run, I headed to the YMCA for Core Yoga.  On the way out the door, we had Blueberry-Cucumber Smoothies (from this month’s Vegetarian Times magazine).

Breakfast:

Lunch:

Citrus Salad (from Color Me Vegan)

Yes, I made the dressing myself and was so happy to finally get to use my new salad dressing dispenser from World Market!

I have generally never been a big grapefruit fan.  The one I used here was a local, organic grapefruit that W asked if I would buy when we popped in the organic food co-op last week.  It was really good.  He even liked it.  It barely had any bitter bite, just a slight bitter after-taste, which is perfectly expected of a grapefruit.

Snack:

(Since it was a rainy day…)Dark Chocolate Cocoa with a few Dandies Vegan Marshmallows (that I won and arrived in my mail this morning!) was in order.  Served with a side of Sliced Apples and Cashew Butter.

Dinner:

Saffron Rice with Curried Apricot Dressing (from Color Me Vegan)

Served with a side of Shelled Edamame
