What I Ate Wednesday: Day of Pleasant Surprises

Yesterday, started out with a short and sweet run.   I was feeling so good afterward, that I decided to try out a local Core Yoga class.  This was my first time back in a yoga studio after a very L-O-N-G time.  I was pleasantly surprised at how well my body responded.

Breakfast:

Green Pink Smoothie

What was packed into my smoothie glass this morning:  organic baby spinach, organic ground flaxseed, organic frozen antioxidant berry blend, unsweetened coconut milk, water, Amazing Grass (love this stuff!) and pitted dates

Lunch:

Raw Carrots, Baba Ghanoush and Go Raw Spirulina Super Chips

This was my first time trying these Spirulina goodies.  They are made out of sprouted organic sesame seeds, organic banana, organic unsulphured coconut, organic dates and organic spirulina.  Just goes to show, I should not judge a book by its cover.  Obviously with those ingredients, they are sweet, but somehow I was expecting more of a chip-y, salty taste.  (Another pleasant surprise).

Dinner:

Black Bean Tacos with Five Pepper Picante-Style Salsa

I found this deliciously hot salsa on clearance along with several other vegan foods at Target.  Check out all of my pleasantly surprising Target clearance finds [HERE].

Dessert:

Mexican Chocolate Snickerdoodles

The cayenne pepper in these babies was a surprise.  I ended up majorly down-playing it, so the kids would enjoy.  It was just enough hint of heat for them not to notice and surprisingly claim that these were the best things they have ever tasted.
