I have been reading more of my new cookbook, Color Me Vegan, and I cannot wait to keep sharing photos with you all.  What I am even more excited about is the book they are sending to me to give away to one of our readers!  Keep reading for the giveaway info below.

One of the things I love about the Color Me Vegan cookbook is all of the anti-oxidant and nutrient information specific to each of the color groups of food.  Colleen Patrick-Goudreau has opened my eyes again to the importance of making my plate look like a rainbow.  The different  nutrients that the full spectrum of colorful foods provides the body is important for staying healthy, having a nutrient-dense diet and balancing the free radicals floating around in our bodies.

There are also tons of  fun health facts included in the book, too.  I now know why cooking tomatoes versus eating them raw is more beneficial to the body, and why lycopene is so important and easy ways to get more of it.

Stay tuned for my Color Me Vegan Series over the next few weeks.  Each week will be focused on a different color.  I plan to include several dishes from the book in each post and will also include a couple of tips on why each color is good for you and how it contributes to your health.
