Citrus Guacamole

We attended a vegan Spanish-themed dinner party this weekend with some good friends.  I am not exaggerating when I say that every adult went back for thirds!  What an incredible meal.

The next day, I had to have more of my friend, Heidi’s, guacamole to go along with the leftover sangria that Jessica sent us home to savor.  I was told the guac had orange juice in it.  I whipped up this Citrus Guacamole for an evening snack and to use as a spread in our wraps for lunch this week.

Citrus Guacamole:

  • 3 large Florida avocados, peeled and pitted
  • 1 1/2 teaspoons salt
  • Juice of 1/2 an orange
  • Juice of 2 limes
  • 1 medium onion, halved
  • 2 medium tomatoes, halved
  • 1/2 teaspoon minced garlic
  • 3/4 cup fresh cilantro, or more to taste

Place all ingredients in Vitamix or high-powered blender or food processor.  Process on low to medium (Variable 3 on the Vitamix) until smooth but still chunky.  You may need to stop and scrape down sides of machine once before finishing processing.  Serve with tortilla chips or in a wrap!
