Fried Oatmeal

After seeing the photos of Fried Oatmeal on Green Groats and With a Side of Sneakers‘ blogs, I knew it was one recipe this southern gal had to try.  My method turned out ultra-quick (since I forgot to chill the oats overnight), and I added a little extra something(s) that made the flavor taste like french toast.  Give it a try y’all!

Fried Oatmeal:

  • Oatmeal
  • Enriched Rice Milk
  • Bear Naked Trail Mix (I used the Chocolate Cherry variety which contains cherries, cranberries, raisins, granola clusters and cocoa-coated almonds…Yum)!
  • Agave
  • Ground Cinnamon
  • Earth Balance

Prepare oatmeal with rice milk or other plant milk of choice.  (I prepared 4 dry, uncooked cups since we had company.  The cooked amount yielded enough for leftovers for the next morning).

Spread oatmeal in glass pan

Sprinkle with trail mix

Press mix into oatmeal using back of spoon

Sprinkle with cinnamon and pop in the freezer for at least 20 minutes.

Once oatmeal has chilled, slice into triangles or squares.  (I did both).

Coat a pan with Earth Balance and pan fry your oatmeal slices on medium heat for approximately 3-5 minutes each side.

Once each side is golden brown, plate the fried oatmeal and drizzle with agave.
