Curry in a Hurry

This weekend we found a new favorite restaurant in Pensacola.  It was by pure chance that we happened to try Taste of India.  It was right next to the running store where my Mom, daughter and I were headed to pick up some new kicks for me.  I had seen their lunch buffet advertised, we were hungry so we decided to try it.

The buffet was small.  If I remember correctly there were 12 dishes with the 6 on the right being vegetarian (not all of them vegan).  The fresh Naan was warm and delicious.  We tried two varieties.

The curry was hot and hit the spot.  My daughter was not as appreciative, but she loved the Naan, potatoes and another dish (which I forgot now what it was called) that I told her was pot pie.  🙂  We will definitely go back, most likely on a weekend night so we can catch the authentic Indian and Belly dancers!

Heidi’s Curry

  • 1 1/2 tsp tomato paste
  • 1/4 large onion, diced
  • 1 clove of garlic, minced or pressed
  • 2 large tomatoes, diced
  • 3/4 can of coconut milk
  • 1/2 tsp ginger powder
  • cumin, garlic powder, and salt to taste
  • 1 1/2 tbsp curry
  • 3 cups of cooked garbanzos drained
  • cooked rice

Blend all but the last three ingredients until well blended.  Transfer to a pan and cook over medium high heat.  Stir in curry, garbanzos, and more garlic powder cumin, and salt if needed.  Cook until it comes to a boil stirring occasionally. If it is too spicy add more coconut milk.  If it is not spicy enough add more curry.  Serve over rice.
