A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Strawberry Banana Smoothies (Strawberries are on sale this week at Publix for $2.50)
  • Fruit Salad and Toast with Organic Fig Preserves (S Carolina peaches are on sale for 99¢/lb, cherries are on sale for $2.49/lb and blueberries are on sale for $2.50/pt)
  • Veggie Sausage, Yellow Corn Meal Grits and Fruit
  • Fried Oatmeal (This one is reappearing since I did not get to it last week with traveling).
  • Cereal, Yogurt, Fruit and Nuts

Lunches:

  • Raw Veggies and Baba Ghanoush (Vegetarian Times July/August 2011)
  • Tofurkey Roll-ups
  • Amy’s Organic Black Bean Burritos (on sale 2/$4 at Publix)
  • Leftovers
  • Eat Out x1

Dinners:

Sunday:

Green Beans, Fried Okra, Rosemary-Baked Potatoes, Corn-on-the-Cob and Fluffy Quick Biscuits (GA Sweet Corn on sale at Publix for $1.99/4ct)

Monday:

Chick’n and Dumplings

Tuesday:

Mushroom and Lima Bean Stew (from Whole Living, December 2010) (Baby Portabella Mushrooms are on sale for $1.50/8oz pkg)

Wednesday:

Muffaletta Sandwiches (Color Me Vegan)

Thursday:

Dinner Out
