What I Ate Wednesday: Week 2

Hump Day last week was so much fun!  It was my first-ever WIAW.  I was like a kid in a candy shoppe looking at the good eats on Jenn’s link party all day.

Here is my What I Ate Wednesday ~ Week #2 party post.

Breakfast:

Warm and Nutty Cinnamon Quinoa (Click HERE for recipe)

Baby Red Quinoa (Canawa) = $6.99/pound at The Health Nut, a small independently owned health food store and express cafe in the Orlando area:

Lunch:

Carrot Pineapple and Raisin Salad with Toasted Walnuts (Recipe to come)!

and in a pita served up by “The Mouse” to help entice the little ones!  (The *fun* measures I have to take sometimes when I make something new).  Haha!

Afternoon Snack:

Coffee pick-me-up on the way out the door for my 4 1/2 hour salon appointment (where I got a smoking deal on my debut keratin treatment)!

Dinner:

Leftover Eggplant Parmesan from the night before since I got home late from my appointment and quick trip to Publix.

Evening Snack:

Tortilla Chips and Gourmet Salsa from our trip to Wisconsin
