BBQ Tofu:

Combine ingredients and heat on medium-low in a frying pan.

Greens:

  • 1/2 package Glory Collard Greens
  • 1 teaspoon sea salt

In medium pot, cover greens with water.  Add salt, stir and bring to a boil.  Reduce heat and simmer until greens are tender, approximately 15-20 minutes.

Creamy Avocado Potato Salad: (from the PPK blog)

This Creamy Avocado Potato Salad gives a different, healthier spin to potato salad, than the traditional mayonnaise-laden ones.  I substituted with bite-size butter potatoes, lemon juice, 2 chopped tomatoes and chopped celery instead of cucumber.  It was so good, I wanted to eat the whole bowl by myself!
