A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Peach Muffins with Pecan Crumb Topping (substituting Earth Balance, Almond Milk and Applesauce)
  • Melon and Watermelon Ball Salad (Cantaloupes are on sale at Publix this week for $2.50 and Watermelon is on sale at 49¢/lb)
  • Cereal, Yogurt, Fruit and Nuts 
  • Green Smoothies

Lunches:

  • TLT’s (Tempeh, Lettuce & Tomato Sandwiches)
  • Soup and Salad
  • Leftovers
  • Eat Out x1

Dinners:

Chinese Take-out and Homemade Peach Cobbler

Monday:

Chick’n and Dumplings (recipe to come)!, Corn-on-the-cob and Salad (Gardein Chick’n BOGO at $3.99 and Georgia Sweet Corn on sale for 33¢)

Tuesday:

Black Beans and Rice, Steamed Kale and Fried Green Tomatoes

Wednesday:

BBQ Tofu with Creamy Avocado Potato Salad

Thursday:

Beans and Greens Soup (recipe to come)!

Fast Food Friday:

Spaghetti and Vegetarian Meatballs with Green Beans and Salad

Saturday:
