A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Veggie Sausage, Yellow Corn Grits, Toast and Fresh Fruit (Sweet Red and Ranier Cherries are on sale at Publix this week for $3.99/lb)
  • Peach Muffins with Pecan Crumb Topping (substituting Earth Balance, Almond Milk and Applesauce)
  • Fresh Berry Salad with Peanut Butter Toast and Agave (Blueberries are on sale at $1.99/pt)
  • Cereal, Yogurt, Fruit and Nuts (Mangoes are on sale for $1 ea)
  • Blackberry, Strawberry, Blueberry and Spinach Smoothies (Blueberries are on sale at $1.99/pt)

Lunches:

  • Tofu Eggless Salad (Crazy Sexy Diet)
  • Peanut Butter, Banana and Granola Wraps
  • Soup and Salad
  • Leftovers
  • Eat Out x1

Monday:

Fajitas with Mushrooms, Broccoli, Peppers and Onions, Black Beans and Rice and Pineapple and Peach Casserole (Substituting Earth Balance, Daiya Cheddar Cheese and Whole Wheat Bread Crumbs) (White mushrooms are on sale for $1.50/pkg)
