Multi-Bean Salad With Edamame

One of my favorite restaurants in Orlando is an organic tea room and cafe’ called Infusion Tea.  They have a bean salad that is probably one of my top 20 favorite dishes.  I keep meaning to beg ask them nicely for the recipe.  Until then, I am pretty darn happy with this rendition!

Multi-Bean Salad With Edamame

For the salad:

  • 1 cup edamame
  • 1 cup lima beans
  • 1 cup black beans
  • 1/8 cup red bell pepper, diced
  • 1/2 scallion, diced
  • 1/8 cup dried cranberries

For the dressing:

  • 1/8 cup canola oil
  • 1 1/2 teaspoons red wine vinegar
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon agave
  • dash of salt and ground black pepper

Combine salad ingredients.  In a glass measuring cup, combine dressing ingredients and whisk until incorporated.  Pour dressing over salad.  Serve chilled.
