Chick’n and Pasta with Creamy White Sauce (Vegan Alfredo)!


  • 1 Bag Gardein Chick’n
  • 1 Box Whole Wheat Pasta
  • 2 Cups Raw Cashews, soaked in water overnight
  • 1/4 Small Onion
  • 1 Tablespoon Minced Garlic
  • 1/4 Cup Red Wine
  • 2 Tablespoons Nutritional Yeast
  • 1 Teaspoon Lemon Juice
  • 1 Tablespoon Crushed Rosemary
  • 1 1/2  Teaspoon Salt

Bring pasta to a boil.  Cook for 8 minutes.  Pan saute’ Chick’n according to package directions.  Meanwhile, puree’ cashews with enough water to cover half of them.

Remove Chick’n from pan.  Saute’ onion and garlic in same pan until tender.  Pour wine into pan and cook for 1 minute.  Add pureed cashews and nutritional yeast.  Stir until mixed well.  Add lemon juice and spices.  Continue cooking on medium-low heat for 4-5 minutes, stirring occasionally.

Serve Chick’n on a bed of pasta topped with creamy white sauce.  Or, if you mix the sauce in with the pasta, it makes a delicious thick and creamy alfredo!
