Sweet Corn, Black Bean and Mango Salad

  • 3 Cans Black Beans, rinsed
  • 2 Mangoes, cut into bite-size pieces
  • 1/2 Red Sweet Bell Pepper, chopped into bite-size pieces
  • 3 Ears Corn, cut off the cob
  • 2 Green Onions, sliced
  • 1/2 Cup Sweet Cherry Tomatoes
  • 1/4 Cup Cilantro, Chopped

Toss everything together in a large bowl.  Serve over tortilla chips, rice and chopped lettuce.  Top with salsa and avocado.
