A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Green Smoothies
  • Fresh Apple Carrot Ginger Juice
  • Strawberry Soy Yogurt and Peanut Butter Toast
  • Cereal, Yogurt, Fruit and Nuts (We have been enjoying the Naval Oranges that have been on sale at Publix for 99¢/lb the last few weeks).

Lunches:

  • Tabouli Salad (Near East tabouli is BOGO this week at $2.19).
  • Pimento Cheese (Recipe to come; W & K are making this one).
  • Soup and Salad
  • Leftovers
  • Eating Out for Cinco de Mayo!

Dinners:

Sunday:

Dinner Out with Family (traveling)

Monday:

Corn-on-the-Cob, Baked Potatoes and Fresh Steamed California Vegetable Blend Medley (FL Sweet Corn on sale at 25¢ each, Idaho Potatoes on sale for $2.99/5 lb bag, Eat Smart Vegetables on sale at $1.67/bag)

Tuesday:

Crock Pot Lasagna (Fresh from the Vegetarian Slow Cooker)

Wednesday:

Terrific Tempeh Tacos

Thursday: Happy Cinco de Mayo!

Tomato Basil Soup with Mango, Corn, Cilantro and Black Bean Salad (soup and beans from stockpile; corn from Monday night.  This should be an easy dinner to put together after coming home from an all-day field trip) .

Fast Food Friday:

Homemade Veggie Sausage, Spinach and Pepper Pizzas (Ragu Pizza Sauce is BOGO at $1.49 each)

Saturday:

Eating out
