Say Grace Sunday: Weekly Vegan Meal Plan

A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

(NOTE:  We are going for a 2-3 day sail this week.  All meals will be prepared and served on our sailboat!  We do plan to make some of the items, like the muffins, ahead of time.  We have a small galley refrigerator, kept cold with ice, where we can store perishables in tightly sealed storage bags.  We also have a two-burner stove, small oven and small grill that attaches to the railing.  I will share pics with you all next week)!

Breakfasts:

  • Serving on the boat: Carrot-Pineapple Sunshine Muffins (Veganomicon)with Canned Pineapple (Dole pineapple is BOGO for $1.69 at Publix this week).
  • Cooking on the boat: Toast with Peanut Butter and Fruit
  • Oatmeal
  • Green Smoothies
