Vegan Farm First Birthday Cake

Happy 1st Birthday to Baby M!

Today is our baby’s first birthday! With each child, the time seems to fly by even faster.  We celebrated this past weekend with a music and farm animal theme.  I thought I would share photos of the cake with you.

The farm cake idea was inspired by my two oldest children.  Then, a friend shared a cute Family Fun cake with me.  The recipe I used was adapted from the Lemon Gem Cupcakes recipe from Vegan with a Vengeance.

I quadrupled the recipe omitting the lemon juice and zest to make them a great plain vanilla cake for the baby’s first cake.  (He was so cute chowing down on one of the sides of the barn).  I used the accompanying frosting recipe, omitting the lemon juice and adding spinach juice for the green “ground” cakes and beet juice for the “barn” cakes.

The green “ground” cakes were baked in two round cake pans, one of them cut to fit against the other.  The red “barn” cakes were baked in one loaf pan, cut in half after it cooled.  The top of the barn, “the shingles,” were small square Kashi cereal pieces.  The silo was made using three cupcakes skewered together.   Little People farm animals and Noah’s Ark animals helped complete the look.
