Say Grace Sunday: Weekly Vegan Meal Plan

A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

**Note:  Yesterday, we celebrated Baby M’s first birthday!  Thus, this week’s meal plan being a day late.  We have family in town with us all week who are not vegan.  I have prepared this week’s menu to be very omnivore-friendly.

Also, I decided to double-up on some of the ingredients, so we will have more time to spend with the family.  I am making double batches of the chili (for tonight’s dinner and for chili veggie dogs for lunch later in the week) and making a double batch of lentils (for both the lentil loaf and Snobby Joes).**

Breakfasts:

Lunches:

  • Veggie Subs and Tangerines (tangerines are on sale for 20 cents each)
  • Soup and Salad (Fresh Express Salad Blends are on sale for 2/$5)
  • Chili Veggie Dogs (using leftover chili from Monday night)
  • Leftovers
  • Eat out x1

Dinners:

Sunday:

Spaghetti, Green Beans, Corn on the Cob and Garlic Bread (green beans on sale at $1.29/lb)

Monday:

The Best Vegetarian Chili in the World and Cornbread (Since it was over 90° yesterday, I am taking advantage of today’s rainy weather and the perfect chance to make chili – a family favorite)!

Tuesday:

Lentil Loaf, Red Potatoes and Roasted Asparagus (making a double batch of lentils for Thursday’s dinner) (asparagus is on sale at $2.99/lb)

Wednesday:

Dinner Out

Thursday:

Snobby Joes, Sautéed Mushrooms and Cole Slaw with Creamy Cole Slaw Dressing (Publix white mushrooms on sale at 2/$3)

Fast Food Friday:

Tempeh Tacos

Saturday:
