Veganomicon Shephardess Pie

We had the VeganomiconShepardess Pie and Cabbage for our St. Patrick’s Day dinner last night.  I had to change-up the Shepardess Pie a little after I discovered I had forgotten to buy tempeh!  We had just enough flavored TVP to substitute for the tempeh.  It turned out really good!

I boiled the cabbage in water with dehydrated vegetable stock and salt in my huge canning stockpot.  I had three heads of cabbage to boil at once since I bought extra when it was on sale for less than thirty cents per pound last week.  After lunch today, I hope to get it all bagged and put up in the deep freezer.
