A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Strawberry Banana Baby Spinach Smoothies (We are using strawberries from our trip to the farm; strawberries are on sale at 3/$5 this week at Publix)

Tuesday:

Spinach Linguine with Edamame Pesto (Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes) and Salad (Mueller’s pasta is BOGO at $1.45 for 2.  Go to their website HERE to sign-up for a coupon to make it FREE)!

Wednesday:

Veggie Dogs, Baked Potatoes and Salad (Idaho potatoes on sale for $2.99/5 lb bag)

Thursday:

Roasted Asparagus, Mushrooms, Red Bell Peppers, Zucchini and Yellow Squash, Green Salad and Cornbread (Asparagus on sale at $2.49/lb, Mushrooms on sale 2/$5, Red Bell Peppers on sale at $2.49/lb, Squash on sale at $1.49/lb and Publix GreenWise Market Organic Romaine Hearts are on sale at $3.49 and Fresh Express Salad Blends and Greens are BOGO at $3.69 for 2)
