Terrific Tempeh Tacos

A couple of nights back we had company.  I thought a taco bar would be fun.  I whipped up the tempeh in just a couple of minutes and put together a tray of toppings so everyone could dress their own Terrific Tempeh Taco.  Pairing these with rice and a pot of black beans makes this the perfect dinner if you do a “fast food” themed meal or have a night when time in the kitchen is limited.

Terrific Tempeh Tacos:

For the Tempeh Taco Filling:

  • 1 package tempeh
  • 1 onion, diced
  • 1 clove garlic
  • 1/4 cup chili powder
  • 6 tablespoons cumin
  • 2 tablespoons thyme
  • 4 tablespoons paprika

For the Taco Bar:

Use your favorite taco toppings and have warmed taco shells ready.  Our taco bar offered lettuce, tomatoes, olives, avocado, cheese, Tofutti sour cream and salsa.

To Make Tempeh: Heat pan on medium-high heat.  Pour just enough water into pan to cover bottom.  Crumble tempeh into pan.  Add onions and saute’ until onions are soft, about 5 minutes, adding more water if needed.  Add garlic and saute’ for an additional minute.  Mix in spices.  Remove from heat and serve warm.
