In the spirit of my Valentine’s giveaway, I wanted to share one of the recipes we tried last week, Carrots in Love.  I had an abundance of baby carrots and wanted to find an interesting new way to use them other than our usual, Carrot Bisque.

That’s when I found Carrots in Love on the Fat Free Vegan website.  The recipe is credited to The Vegetarian No-Cholesterol Family-Style Cookbook

The new dish was quite sweet with the bananas, so you could even serve it as dessert.  This was such a super simple and quick dinner to prepare.  Everyone loved the new dish, and we had several servings of Carrots in Love leftover to snack on all week!
