A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Green Smoothies 
  • Oatmeal
  • Cereal, Yogurt, Fruit and Nuts (Back to Nature Granola is BOGO at Publix this week at $1.79 ea)

Lunches:

  • Sweet Potato Hummus, Raw Veggies, Slice of WW Bread and Fruit
  • Amy’s Organic Burritos (stockpile from last week)
  • Soup and Salad
  • Leftovers
  • Eat out x1

Carrot Bisque (Vegan with a Vengeance)(Organic Carrots on sale at 99¢/bag)

Monday:

Pad Thai with Tofu and Broccoli (The Engine 2 Diet: The Texas Firefighter’s 28-Day Save-Your-Life Plan that Lowers Cholesterol and Burns Away the Pounds)

Eat Smart Vegetables, 10 or 12 oz on sale at $1.67)

Tuesday:

Spaghetti, Steamed Carrots and Salad (Organic Carrots on sale at 99¢/bag)

Wednesday:

Potato Asparagus Soup (Vegan with a Vengeance)

Thursday:

Crock Pot Veggie Cassoulet (Bertolli Pasta Sauce BOGO at $1.44 ea)

(This is an inspired dish from our lunch at Cinderella’s castle last week for K’s birthday.  Slicing all extra veggies that are in the refrigerator that need to be used.  Tossing in the crock pot with lots of minced garlic, spaghetti sauce and about 1/2 cup of water.  About 30-45 minutes before done, placing spoonfuls of biscuit dough on top)

Fast Food Friday: (YES!  Changing this to Fast Food Friday instead of Pizza Night.  This is also Game Night at our house now…new for 2011)!

Veggie Burgers, Baked Potatoes and Salad (Boca Burgers BOGO at $1.89 ea)
