A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Green Smoothies (Publix brand all-natural frozen fruit is on sale this week at 2/$4)
  • Classic Broccoli Red Bell Pepper Quiche (Vegan Brunch or Isa’s similar recipe HERE) (Broccoli is on sale 2/$4)
  • Blueberry Muffins and Grits
  • Cereal, Yogurt, Fruit and Nuts (FL Strawberries on sale at $2.99/16-oz pkg) 

Lunches:

  • Polenta Rancheros (Vegan Brunch or similar recipe HERE)
  • Soup and Salad
  • Raw Veggies, Hummus, Pita Chips and Fruit
  • Leftovers
  • Eat out x1

Dinners:

Monday:

Stuffed Shells (Fresh Express Salad Blends are BOGO at $3.99)

Tuesday:

Lentil Loaf (appearing on the menu again since we ended up eating out a couple of times last week) with Green Beans (defrosting from the organic BOGO sale a few weeks ago), Mashed Sweet Potatoes and Salad 

Wednesday:

Stir-Fry with Gardein Beefless Tips

Thursday:

Spaghetti and “Meat”balls (using vegan sausage rolled into balls) and Salad (Ragu Pasta Sauce BOGO at $2.19)

Friday:

Vegetable Soup and Cornbread (making a double batch for tomorrow’s  New Year’s Day dinner)

Saturday: (HAPPY NEW YEAR)!

Blackeye Peas, Turnip Greens, Sweet Potatoes & Cornbread (Publix brand dried blackeye peas on sale at 79¢/bag and Glory Greens are BOGO at $2.99)
