Say Grace Sunday: Weekly Vegan Meal Plan

A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Stuffed Orange French Toast (using English muffins from the freezer stockpile and FL Navel Oranges which are on sale at Publix this week for 2-four lb bags for $5)
  • Green Smoothies
  • Oatmeal
  • Cereal, Yogurt, Fruit and Nuts 
  • Homemade Granola Bark (I didn’t get to this last week, but have to this week since I’m using my expiring stockpile of granola cereal.  This 5 minute no-bake recipe is the one I’m trying first)

Lunches:

  • Soup and Salad
  • Peanut Butter-Stuffed Prunes and Raw Veggies with Peanut Butter (Del Monte Pitted Prunes are BOGO at $3.39)
  • Curried Tempeh-Mango Salad Pitas (Vegan With a Vengeance) (Mangoes on sale for $1 each and scallions are on sale 3/$1.29)
  • Leftovers
  • Eat out x1

Dinners:

Sunday:

Autumn Vegetable Stew and Cornbread (Vegan Planet)

Monday:

Three-Bean Crockpot Chili and Chive-Flecked Cornmeal Dumplings (Fresh From the Vegetarian Slow Cooker) or (find an adapted recipe HERE)

Tuesday:

Taco Salad (using leftover chili from Monday night)

Wednesday:

Portobello and Green Bean Ragout (Vegan Planet) and Salad

  • Baby Portobello Mushrooms on sale at $1.69 for 8 oz whole or sliced package.
  • Subbing scallions for shallots since scallions are on sale 3/$1.29
  • Using free organic green beans from last week’s sale!

Thursday:

Spicy Black Beans and Rice with Mangoes (Fresh From the Vegetarian Slow Cooker), Roasted Asparagus and Salad

  • Mangoes on sale for $1 each

Friday:

Pizza Night

Saturday:

Eat Out
