A Week Of Thanksgiving Leftover Makeovers: Mashed Potato Corn Chowder, Cranberry (Sauce) Pineapple Smoothie and Roasted Butternut Squash Pumpkin Bisque

We had a heap of leftover mashed potatoes after Thanksgiving.  So, last week before we headed back home, I invited both sets of grandparents and an aunt over to enjoy mashed potatoes and leftover corn-on-the-cob with us again.  This time it was presented as a chowder.  It was delicious.  I adapted the recipe from a vegan diabetic cookbook I gave my Mom a couple of years back.

We also had a quart-size Mason jar full of leftover homemade cranberry sauce.  I’m freezing most of it, but used some with fresh pineapple, kale and flax in a delicious smoothie.  The kids (and their friends who were over playing that day) kept asking for more!  Here it is about to be blended…

And this weekend I plan on turning the leftover roasted butternut squash and Seminole Pumpkin into a warm, hearty bisque.  Stayed tuned for those photos.
