Tofurkey Turkey Party Sandwiches

Last week we attended a Thanksgiving potluck at the park with several of our home school friends.  Lunch was like manna sent from Heaven.  So many vegan choices, so little time (and room in my belly). The kids had fun helping assemble these cute little Tofurkey Turkey Party Sandwiches to share with their friends.

Tofurkey Turkey Party Sandwiches:


  • Whole Wheat Bread
  • Tofurkey (the Roasted “Turkey” sandwich variety found in the produce section at your local grocery store)
  • Whole Romaine Lettuce Leaves (or cut in half)
  • Red Bell Pepper, cut into small “goozle” or “wattle” shaped pieces
  • Black Olives, sliced

Between sandwich bread slices, place one slice of Tofurkey and one lettuce leaf so that it peaks out the top (to resemble the turkey feathers).  Using a small round bowl, cup or round sandwich cutter, cut the sandwich leaving an inch or two of the crust on bottom of sandwich.  Pinch a small part of that remaining crust off (to make it resemble two turkey feet).  Arrange red pepper goozle and olive eyes.
