A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • BOOberry Oatmeal (Thanks to my friend, Gretchen, at What a Healthy Family Eats for the idea)
  • Cereal, Fruit, Nuts and Rice Yogurt
  • Apple Muffins (Organic Honeycrisp apples are on sale at Whole Foods this week at $1.99/lb, and conventional apples are on sale at Publix at 99¢/lb)
  • Apple Cinnamon Oatmeal
  • Veggie Sausage, Grits, Sautéed Spinach and Fruit (Hosting an out-of-town guest) (Publix Fresh and Tender Spinach Bag on sale for $2)
  • Green Smoothies

Lunches:

  • Tangy Carrot-Apple Salad with Cider Vinaigrette (Veg Times 10/10), Soup and Salad
  • Black Beans, Corn and Avocado (Georgia-grown corn on sale for 50¢)
  • Hummus, Raw Veggies and Fruit (Broccoli and Cauliflower on sale at $1.50 each)
  • PB and Banana Roll-Ups (ToufayanWraps on Sale at $1.59)

Dinners:

Monday:Thai Pumpkin Soup (Vitamix Whole Foods Recipes)

Tuesday:

Wednesday:

Moroccan Tagine (Vegan With a Vengeance)

Thursday:

Cajun-Style Stuffed Bell Peppers and Broccoli Raab (Cooking with Paula Deen 09-10/10)

Friday:

Homemade Pizza
