Pumpkin Spice Latte (Vegan Starbucks Like Recipe)

Days are slowly getting shorter and cooler.  Pumpkins have begun beckoning me in the supermarkets.  On nice fall mornings like this one, I couldn’t think of anything better to follow my beach run before starting school with the kids than a nice latte.  A cup of hot pumpkin spice latte!

I have been eyeing this “Do It Yourself: Pumpkin Spice Latte (Just Like Starbucks) Recipe” ever since I enjoyed a venti Decaf Soy Pumpkin Latte a few weeks ago at my local coffee-house.  The only problem with chain coffeehouses is it’s sometimes hard to be certain what has been added to the coffee.  In fact, I recently read that some of the popular coffeehouses’ Pumpkin Lattes are not even gluten-free.  Huh?

So, I decided this morning to make my own, delicious, hot, vegan pumpkin lattes.  Two for me, one for hubby and extra pumpkin frothy-goodness (minus the coffee) for the 2 big kiddies.

Pumpkin Spice Latte

(Adapted from Kathryn Hill’s Pumpkin Spice Latte Recipe at The Kitchn)
Makes 3 servings
  • 2 Cups Almond Milk
  • 2 Tbsp Canned Pumpkin or Pumpkin Puree’
  • 2 ½ Tbsp Agave Nectar
  • 1 ½ Tbsp Vanilla Extract
  • ½ tsp Pumpkin Pie Spice
  • 3 Cups Fresh Decaffeinated Coffee
  • Vegan Whip Cream, optional
  • Cinnamon Sprinkled on Top, optional

Brew 3 cups of coffee.  (I used a yummy International Decaf blend).  In a medium pot, whisk together almond milk, pumpkin and agave nectar on medium high heat until steaming.  Remove from heat.  Stir in vanilla and pumpkin pie spice.  Using an immersion or regular blender, process for 15-20 seconds.  If using a regular blender, hold a towel on top of the blender to prevent the steam from popping the lid off.  Begin processing by pulsing first.  I released the center cap of my blender lid a few times to release some of the steam.  Divide pumpkin froth among 3 mugs, adding coffee on top.  If you would like an extra pumpkin pie-like feel, add vegan whip cream with a dash of cinnamon on top!
