Green Pizza with Olive Tapenade


Makes 2 Large Pizzas

For the Tapenade:

  • 1 Jar Kalamata Olives
  • 3 Tbsp Plain Soy Yogurt
  • 2 Tbsp Chopped Garlic
  • ¼ Cup Cubed Cucumber


For the Pizza and Toppings:

  • 2 Prepared Pizza Dough Rounds
  • ½ Package Daiya Mozzarella Cheese
  • 4 Cups Baby Spinach
  • ¾ Bunch Asparagus
  • 2 Cups Broccoli
  • ½ Cup Green Bell Pepper Strips
  • ¼ Cup Red Onion Strips
  • 1 Cup Cherry Tomatoes (optional)
  • ¼ tsp Oregano
  • ¼ tsp Thyme
  • ½ tsp Salt
  • ¼ tsp Pepper

In a food processor, combine all ingredients for the pesto.  Spread over two pizza dough rounds.  Sprinkle half of the Diaya cheese over pizzas.  Layer pizza toppings .  Sprinkle remaining cheese on top of pizzas.  Sprinkle with seasonings.  Bake in a 425° oven for 7-10 minutes.
