A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Mini Fruit Pizzas (Food for Life English Muffins on sale at Publix this week for $3.99)
  • Strawberry Banana Smoothies
  • Peanut Butter Cocoa Smoothies
  • Oatmeal
  • Cereal, Yogurt and Nut Clusters (Kashi Cereal on sale $2.50.  Use THIS $1/2 Whole Foods coupon, if your store considers them a competitor, to make them $2 each)!  (Almond Breeze, 32 oz. and Silk Soymilk 1/2 gallon on sale for $2.50).

Lunches:

  • Soup and Salad (Publix Salads are on sale for $2).
  • Tofurkey Sandwiches
  • Pear Salad (California-Grown Bartlett Pears are on sale for 99 Cents/lb)
  • Leftovers
  • Eat out x1

Dinners:

Sunday:

Gardein Chick’n Scallopini, Baked Potatoes, Green Beans and Salad

Monday:

Coconut Curry Tofu and Salad

Tuesday:

Poblano Rice, Stewed Squash, Fried Green Tomatoes and Salad

Wednesday:

Black Bean Burgers and Potato Salad

Thursday:

Vegetable Pot Pie (Publix frozen vegetables are on sale for 99 cents).

Friday:

Green Pizza with Olive Tapenade (homemade tapenade topped with Spinach, Asparagus, green bell peppers, broccoli and Daiya mozzarella cheese) (Publix frozen vegetables are on sale for 99 cents, and Lindsey Olives are on sale for $2).

Saturday:
