A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Yogurt (Rice, Soy or Coconut Yogurt) Fruit and Nut Parfaits
  • Green Smoothies
  • Honeydew and Grape Salad (Honeydews $2.50 at Publix this week)
  • Oatmeal with fruit

Lunches:

  • TLT Pitas (Tofurkey, Lettuce and Tomato)
  • Hummus with Baby Spinach, Carrots and Celery Sticks
  • Tomato Soup (Progresso Soups are BOGO for $1.14 each)
  • Leftovers
  • Eat out x1

Dinners:

Sunday:

Vegetable Soup

Monday:

Lasagna and Green Beans

Tuesday:

Carrot Bisque (from Vegan With a Vengeance)

Wednesday:

Scalloped Potatoes and Apples (from Publix Apron’s Simple Meals) (substituting with almond milk, vegan butter and cheese), Fried Green Tomatoes and Okra

Thursday:

Creamy Asparagus and Potato Soup (from Vegan With a Vengeance) (Yes, we are eating LOTS of soup this week since my body is begging for as many home-cooked vegetables as I can possibly eat after being on the road for nearly 2 weeks)!

Friday:

Green Pizza (made with spinach, broccoli, asparagus and shredded vegan mozzarella cheese)

Saturday:
