A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Melon Ball Salad (Honeydews 2/$5, Cantaloupes 2/$4 and Grapes $1.49 lb at Publix this week)

Tofurkey, Almond Cheese and Grape Skewers

Hummus with Baby Spinach, Carrot and Celery Sticks

Tomato Soup (Campbell’s Tomato Soup 4-packs are $1.99 this week at Publix, if they are vegan)

Flat Bread with roasted eggplant, roasted peppers, olives, spinach and vegan cheese and Salad

Monday:

Chickenless Primavera (altered recipe from Apron’s Simple Meals in this week’s Publix weekly ad) and Salad

Tuesday:

Minestrone Soup (Progresso Soups are BOGO at CVS this week.  Go HERE for a $1/4 coupon) and Salad

Wednesday:

Stir-Fry with Brown Rice (using Publix frozen vegetables on sale for 99 cents this week)

Thursday:

Sea-Sational Chickpea Salad Served on a bed of Baby Spinach with sliced Tomatoes

Friday:

Pizza Night

Saturday:
