Say Grace Sunday: Weekly Vegan Meal Plan

My weekly vegan meal plan is made according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  I blogged about this week’s vegan-friendly items on sale at Publix this week HERE.

Breakfasts:

  • Fuzzy Navel Smoothies (peaches, orange juice, soy yogurt, kale, water, agave and ice)
  • Peaches and Cream Oatmeal (peaches, flax and Silk soy creamer added in at end)
  • Cereal, Kiwi and Nuts
  • Nutty Waffles with Cherry Marmalade (frozen from last week)

Lunches:

  • Lentil Soup
  • Hummus, Carrot & Celery Sticks, Baby Spinach Leaves and Whole Wheat Crackers
  • Leftovers
  • Eat Out x1

Dinners:

Sunday:

  • Veggie Dogs on Sprouted Wheat Buns, Roasted Potatoes and Salad (I am keeping it simple this evening since we had a big brunch after church and are headed sailing this afternoon)!

Monday:

  • Tomato and Roasted Eggplant Stew with Chickpeas (Vcom)

Tuesday:

  • Escarole with Capers and White Beans (Vcom, using Kale in place of Escarole)

Wednesday:

  • Lentil Soup (doubled for lunch leftovers)

Thursday:

  • Broccoli and Olive Penne with Salad

Friday:

  • Pizza Night

Saturday:

  • Eat Out
