Mommy of 5 Switches to Vegetarian Diet

Have you ever thought about switching to a plant based diet, but had worries you would not know where to start, or “what about my family?”  A good friend of mine, who was once a New York Yankee, but now hails from my home state of Alabama, has offered to let me spotlight in a couple of posts each month her transition to vegetarianism.

Christina is married with four beautiful children and one bun in the oven.  Her husband, children and community of friends are super supportive of her and her decision.

Here are Christina’s thoughts during Week 1 of switching to a vegetarian diet:

“Been eating Vegetarian for a week now. I think I can get used to this. ♥… Small steps…I am committed to it. I’m not forcing the family into it though. I’d like to find recipes where they can still have meat with their dinner but where [I] feel I got a full meal without the meat. We are doing some all veggie meals for the entire family, so we are cutting back on the meat for their other meals.

I don’t have an aversion to meat during this pregnancy. I just have been having a lot of problems with my health and wanted to change some things. I’m also working on cutting out all the junk I eat as well. After the baby comes I plan to transition to an all Vegan diet.  It’s going to be a slow process for me though because I’ve been eating like this for [30 something] years.”
