Tonight, Mommy was given a much appreciated night off. While I was enjoying a shopping trip to Target preceded by an intense hour-long massage, my family was home enjoying one of our favorite dishes from Skinny B in the Kitch, Green Goddess Pasta. (Skinny B for short…fill in the last four letters).
Green Goddess Pasta was given two thumbs up by the kids the very first time I prepared it. Since it is full of greens (broccoli, zucchini and kale, which I substituted with baby spinach this time), it quickly became one of my favorite meals, too. It is also one of the only dishes that the kids will actually eat their zucchini. (Check out the enormous zucchini from my parents’ garden)! And if that isn’t enough to convince you to give it a go, it takes about 15 minutes to prepare. (Note, I drain water completely instead of reserving the 1/2 cup the recipe calls for).
If you are not familiar with the Skinny “B” series, I do highly recommend it. It is a quick and easy yet ultra-informative read.
