Breakfast:
Oatmeal with blueberries, cinnamon, flax, chia and a touch of brown sugar
Lunch:
Green Juice – Have you seen Fat, Sick and Nearly Dead? I just watched it on Netflix this week. It is very inspirational and has helped me to jump back on the juice bandwagon for health. I could tell it gave me a boost of energy that has been zapped by this cold.
Snack:
Banana at the ball park
(Sidenote: These are the very first pair of real sunglasses I have ever bought. I picked them up at the Disney Princess Half Marathon Expo last weekend. Sadly, I re-injured my foot the night before the race and had to miss it. But, I have new Oakley running shades for when my injury is finally healed)!
Dinner:
Cosmic Cashew Kale [Collards] and Chickpeas from Fat Free Vegan Kitchen <– Click for recipe. I subbed in half a bag of collards, used 2 cans of chickpeas and used vegetable broth in the cashew dressing mix. I also only had quinoa flakes, so we had ours over rice this time.

I’ve seen Supersize Me, Food Inc, and Forks Over Knives. Food Inc was my favorite, but they were all eye-opening.

Haven’t watched any food documentaries lately. They tend to just make me too frustrated with people who know what’s going on/what they’re eating and yet do nothing to make changes. That said, I can’t get on the juice/smoothie bandwagon. I know they’re so good for you, but I’m just not satisfied if that’s my meal!

I loooved Fat Sick and Nearly Dead. FOK is one of my favs too. So glad that educational healthy living documentaries are becoming more and more popular theses days! Love that pic!
