Today’s eats contained lots of taste-testing. We are gearing up for a big Thanksgiving here. With so many yummy dishes going in and coming out of the oven, I could not help myself.
Breakfast:
Blackberries and Pumpkin Cream Pie Smoothie [recipe below!]
Lunch:
Southwest-Style Salad
Dinner:
Pumpkin Cream Pie Smoothie Recipe:
- 1 banana
- ¼ cup raw cashews
- 3 tablespoons Coconut Milk Plain Yogurt
- 1 cup Silk Pumpkin Spice Soymilk
- ½ cup almond milk
- 1 ½ tablespoons chia seeds
- 1/8 teaspoon pumpkin pie spice
Blend all until smooth.

Hi Sara, I love how the cashews made it creamy. I’m sure you could sub the cashew butter, although depending on what is in it, it may give it more of nutty flavor.

I’m taste-testing some cranberry sauce. It’s on my blog.
I mean, I always make it and I’ve been eating it and I will eat it tomorrow.

Prof Veg, I wish I would have seen your recipe before making my cranberry sauce Monday. I used a different recipe than the usual, and it came out too runny. I ended up adding more sugar, a cornstarch mixture and cooking longer. It finally came out to an acceptable consistency, but I still had to pour off some of the liquid. I figure we’ll use it as a pancake syrup this weekend.
